I would start looking at the mounts / bolts the surrounding the steering wheel plus the clearance of the steering column from other parts.

I would say more or less as long as the cat is maintained for short journey I'm having scorpion on my Meglio (de-cat, non res, cat back only).

slight ride difference depends on the utilization (track vs road) apart from fatty vs skinny look. I switch in between for track days (I go with 225/45/17) with more camber (~-2.5) and for road with 215/45 with a less camber (~-2.0) what's your wheel's J? is it 7J or more?

sounds like the friction plate isn't fully releasing. were the lines bleed properly? how are gearbox linkages? any obstacle across them

Have you inspect the fuel pump itself? it might be contaminated with bits of carbon from the vacuum canister. the symptom you are experiencing " the speed limiter is stuck on while your kangarooing while hitting the rev limiter all at the same time" potentially can be caused by that. over time...

Don't get bothered with dyno figures as long as the car drives smoothly and fault free
