It's so quick because they make up the seat covers in advance then it a case of swapping covers.

Do they re-trim standard interiors / seats?

I've not seen any pics of them having done some but if you look at their website they've done a few different types of seat so I reckon as long as you give 'em enough time with the car they'd do it no problem.
